Biscotto di Sorrento stone for Millarco Cozze 13 pizza oven

Experience authentic Neapolitan pizza quality – straight from your pizza oven.
The Biscotto di Sorrento is not an ordinary pizza stone, but a traditionally crafted natural product from southern Italy, developed specifically for perfect baking results.

    Origin & material

The stone is made from a unique blend of natural clay that is rich in volcanic silica and pumice.
This raw material comes from the region around Sorrento – renowned for its mineral-rich soils and centuries-old craft tradition.

Each stone is traditionally handcrafted at Fornace Aversa, one of the last original producers of these special baking stones.

The key advantages of the Biscotto di Sorrento

    1. Perfect pizza base – no burning
Unlike conventional cordierite or fireclay stones, the biscotto prevents the typical burning of the pizza base.
→ The stone absorbs excess moisture from the dough and ensures an even baking structure.

    2. Optimal porosity
    The natural pore structure allows:

    • rapid heating
    • even heat distribution
    • consistent baking conditions

    3. Gentle heat release
The Biscotto stores heat efficiently but releases it in a controlled and “soft” way.
→ Ideal for genuine Neapolitan pizza at high temperatures.

    4. Professional results – even in a home oven
Especially in compact ovens like the Millarco Cozze 13, this stone significantly boosts performance.
→ Your oven reaches a level otherwise only possible with professional stone ovens.

    5. Authenticity like in Naples
The Biscotto is traditionally pressed in wooden molds, air‑dried and then gently fired over several days.
→ Not an industrial mass product – but genuine craftsmanship.

    Handcrafted quality – deliberately unique

Since each stone is individually crafted, the following features may occur:

    • slight dimensional deviations (a few millimeters)
    • small chips or irregular edges
    • fine surface cracks
    • Color variations or “flames” in the material

These characteristics are not a defect, but a sign of genuine craftsmanship and do not affect functionality in any way.

    FAQs

Quickly find answers to frequently asked questions

    Product & Usage

    1. Which accessories are truly essential for perfect pizza in a gas or wood-fired oven?

Essential accessories include a high-quality pizza peel, a thermometer for precise temperature control, a pizza stone or rotating plate for even baking, and a brush for cleaning the baking surface. These tools make handling the oven easier and ensure optimal baking results.

    2. Are the accessories compatible with my pizza oven (Ooni, Gozney, etc.)?

Most professional pizza oven accessories are compatible with different models, including both gas and wood-fired ovens. It’s important to check the dimensions of the oven and the baking surface to choose the right accessories.

    3. Why should I choose professional accessories instead of cheaper alternatives?

Professional accessories are made from heat-resistant and durable materials, offer better performance and a longer service life. They improve baking quality, reduce errors, and ensure consistently perfect pizza results—both at home and in professional use.

    Maintenance & Accessories

    1. What maintenance do the tools require?

To keep your pizza oven tools in perfect condition, they should be cleaned after every use. Residual flour, dough, and ash can easily be removed with a brush or a slightly damp cloth once everything has cooled down. Metal tools such as peels, turners, or brushes should occasionally be treated with food-safe oil to prevent rust. Wooden handles must not be soaked or cleaned in the dishwasher. Regularly checking for wear ensures safety and a long service life.

    2. Can spare parts or accessories be purchased separately?

Yes, many spare parts and accessories for pizza ovens can be purchased separately. These include, for example, replacement handles, brush heads, thermometers, or pizza stones. When buying, make sure the parts are compatible with your oven model and have the correct dimensions. This way, you can individually expand your setup or replace worn components.

    3. Do you provide operating or user manuals?

Yes, for most accessories we provide user manuals or usage instructions. These are available digitally (PDF) or directly on the product page. The manuals help you use the tools correctly, handle them safely, and extend their service life.

    Warranty & Guarantee

    1. What is the difference between a guarantee and a warranty?

The statutory warranty period is 24 months from the date of purchase. It covers defects that already existed at the time of purchase.

The guarantee is a voluntary service provided by the manufacturer and may vary in duration and scope.

    2. How long is the warranty period for the products?

All products come with the statutory 24-month warranty. During the first 12 months, it is presumed that any defect already existed at the time of delivery, unless proven otherwise.

    3. What does the warranty cover?

Depending on the manufacturer, the warranty covers material and workmanship defects. Damage caused by improper use, normal wear and tear, or incorrect care is generally excluded. The exact terms are described in the respective warranty documents.

    4. How can I report a warranty or guarantee claim?

In the event of a defect, please contact our customer service with your order number, a brief description of the issue, and, if applicable, photos or videos. We will review your case as quickly as possible and take care of a solution.
