Experience authentic pizza like from a traditional Italian pizza oven: the Original Biscotto di Sorrento® is produced in Italy using traditional artisanal methods and is characterized by its special porosity and low thermal conductivity.
It’s at particularly high baking temperatures that the Biscotto really shows its strengths: it absorbs moisture from the pizza dough and releases the stored heat very evenly into the pizza base. This reduces the risk of the base burning too quickly while allowing the dough to bake up airy and crisp.
With its dimensions of 30 × 30 × 2 cm, the Biscotto is perfect for the CASO PizzaChef and offers a high-quality alternative or addition to a conventional pizza stone.
The thickness of 2 cm allows for relatively fast heating while still providing excellent heat retention – ideal for baking several pizzas in a row.
The clay used comes from the region of the Sorrento peninsula. Its natural composition with volcanic components and pumice gives the biscotto its characteristic porous structure.
This porosity is crucial for its special baking properties: the stone can absorb moisture from the dough while at the same time having low heat transfer. Especially at very high temperatures, this ensures that heat is transferred more gently and evenly to the pizza base.
The result: ideal conditions for Pizza Napoletana and other pizza styles at high baking temperatures.
The Biscotto di Sorrento® is handcrafted using traditional methods at Forni Aversa in Italy.
Each stone is therefore unique. Small dimensional deviations of a few millimeters, different color shades, pores, small indentations, irregular edges, superficial hairline cracks or slight chipping may occur due to the production process.
These characteristics are typical features of an artisan-made biscotto and do not affect its function or baking properties.
