Original Italian biscotto from Sorrento – handcrafted by Forni Aversa
Experience traditional Neapolitan pizza craftsmanship with the premium Biscotto di Sorrento®, specially tailored for the Millarco Cozze 17 pizza oven.
This handcrafted pizza stone from the Italian Sorrento peninsula impresses with its special material composition, excellent thermal properties, and its ability to protect the pizza base from burning even at high baking temperatures.
The Biscotto di Sorrento is the ideal choice for anyone who wants to prepare authentic Pizza Napoletana with airy cornicione, perfectly baked base, and short baking times.
The basis of the Biscotto di Sorrento is a special clay mixture from the Sorrento region, which is rich in volcanic minerals, silicon compounds and pumice.
This natural composition gives the stone its characteristic structure and clearly distinguishes it from conventional fireclay and cordierite stones.
Thanks to its special porosity, the Biscotto di Sorrento offers crucial advantages when baking pizza:
Lower heat transfer: The stone releases the stored heat in a controlled manner to the pizza base, thereby reducing the risk of a burnt bottom.
High heat retention: Supports even heat distribution during the baking process.
Optimal moisture absorption: The porous surface can absorb moisture from the pizza dough and supports the development of a pleasantly baked pizza base.
Ideal for high temperatures: Particularly suitable for the high baking temperatures of Neapolitan pizza.
Even baking results: Enables a well-baked base while the rim can rise light and airy.
When preparing a traditional Pizza Napoletana, very high temperatures are required. Conventional pizza stones can transfer the heat to the dough too quickly, causing the base to burn before the pizza is fully baked.
Meanwhile, the Biscotto di Sorrento® by contrast, is characterized by its lower thermal conductivity. This allows the pizza to be baked at high temperatures without the base burning as quickly.
The result: a light, airy cornicione, a pleasantly baked underside, and an authentic Neapolitan pizza experience.
Each Biscotto di Sorrento is produced in Italy using traditional artisanal methods by Forni Aversa manufactured.
Unlike industrially manufactured pizza stones, this is a genuine artisanal natural product.
Due to the manufacturing process, the following characteristics may occur:
Minor tolerances in dimensions and weight
Slight differences in color and surface texture
Natural pores and small indentations
Small chips on edges or corners
Superficial hairline cracks and irregularities
Slight unevenness on the underside
These characteristics are typical features of traditional manufacturing and, as long as function is not impaired, do not constitute a quality defect.
Important: A biscotto is not an industrially manufactured ceramic or tile surface, but a handmade, porous pizza stone with individual characteristics.
