Handmade Biscotto baking stone from Sant’Agnello near Sorrento – precisely tailored as an upgrade for the Ooni Karu 2 Pro and available as front stone, rear stone or complete two-piece set.
You decide whether you want to replace only a single section of the baking floor or convert the entire baking floor of the Ooni Karu 2 Pro to Biscotto di Sorrento®.

For the most uniform possible heat transfer across the entire baking surface, we recommend the complete two-piece set. The individual stones are ideal if only the front or rear area needs to be replaced or specifically upgraded.
The Ooni Karu 2 Pro reaches very high temperatures with wood, charcoal or the optional gas burner. This is exactly where the Biscotto di Sorrento® shows its strength: its open-pored structure transfers the intense bottom heat to the dough more gently and in a more controlled way than a very dense baking stone.
A powerful oven alone does not guarantee a perfect pizza base. What matters is how the stored heat is transferred to the dough. The Biscotto di Sorrento® helps make the strong performance of the Ooni Karu 2 Pro more suitable for Neapolitan pizza – with high top heat, controlled bottom heat and more leeway when baking.
“Biscotto” is not automatically the same as “Biscotto”. What matters are origin, raw material blend, porosity, drying and firing. The mineral-rich clays of the Sorrento Peninsula give our stone its characteristic structure and its special behavior at very high temperatures.
Stones offered on the market under names such as Saputo or Casapulla may – depending on the manufacturer and the recipe – contain sand or pozzolanic mineral components. Such formulations therefore cannot generally be equated with our original Biscotto di Sorrento®. According to the manufacturer, our product is made at Fornace Aversa from the traditional Sorrento clay blend; sand is not added as a low-cost filler to reduce the clay content.
At Fornace Aversa, the knowledge of processing refractory clays has been preserved for generations. After shaping, the stones are slowly dried and fired. This creates the characteristic open-pored surface that distinguishes the Biscotto di Sorrento® from industrially manufactured, very dense pizza stones.
Slight tolerances in dimensions and weight, color variations, pores, small indentations, a rough underside, superficial hairline cracks as well as minor irregularities on edges and transitions are typical characteristics of artisanal production. As a rule, they do not constitute a quality defect and do not impair the function of the stone.
